Blueberry Creame Pie

Blueberry Creame Pie
Ingredients
1. Prepare pie shell. Rinse blueberries and allow to dry. Prepare creame.
2. Rinse kanten, shred into apple juice and cook until it boils. Lower heat and simmer until kanten dissolves (OR, as I did, sprinkle the 2 tsp of powder into the juice, and boil, and it's already dissolved then, and you're done this step).
3. Add half of blueberries and vanilla to kanten mixture. Stir well.
4. Fold half of creame into kanten mixture. Cook on low heat for 3 minutes, stirring constantly. Spoon mixture into prebaked shell.
5. Chill until almost firm, th en add remaining blueberries to remaining creame. Spread over top (make sure the bottom is FIRM, or it will split and spill when you put the top on, because the top part is heavy)
6. Garnish with the nuts or the oats, or whatever
7. Chill until firm (a couple of hours - I did overnight)
Oat Creme
Ingredients
1. Roast oats in 1/4 cup of oil, until lightly browned (just put the oil and the oats in a frying pan, and stir every once in a while, until they're brown)
2. Combine juice and oats in a pot, and bring to a boil, stirring occasionally. Add remaining oil, salt, and sweetener if desired.
3. Lower heat, cover and simmer at least 30 minutes.
4. After cooking, add cinnamon and vanilla. Blend until creamy and smooth. This can be kept several weeks if properly chilled.
Tofu Creame
Ingredients
1. Combine juice with tahini and cook on a medium heat until warm.
2. Squeeze extra liquid from tofu. Combine with salt and apple juice mixture and blend until creamy.
3. Dilute arrowroot in sweetener and 3 Tbsp apple juice. Set aside.
4. Place tofu mixture in pan, and when almost boiling, add arrowroot mixture, stirring rapidly until mixture boils and thickens. Remove from flame. Stir in vanilla. Use immediately.
Rolled Oat Pie Crust
Ingredients
1. Mix together ingredients. Press evenly onto bottom of pie plate. Bake at 350 Degrees for 10 minutes (or so) before using.

- 1 9in pie shell, pre-baked (I used an oat pie shell recipe, see below)
- 4 cups blueberries
- 2 cups Oat Creame (I just used the whole recipe) OR Tofu Creame (whichever you prefer - I used Oat Creame)
- 1 bar kanten (which equals 3 Tbsp agar-agar flakes, or 2 tsp agar-agar powder)
- 2 cups apple juice or cider
- 1 tsp vanilla
- Crushed roasted nuts (or I used a bit of left over oat pie shell recipe, which I toasted until crisp, then sprinkled) to sprinkle on top

- 1/2 tsp salt
- 1/4 cup maple syrup (optional - I used it, but it probably wasn't necessary)
- 1 tsp cinnamon
- 1 tsp vanilla

- 2 cups tofu
- 1/4 tsp salt
- 1 1/2 Tbsp arrowroot flour
- 1/4 cup maple syrup
- 3 Tbsp apple cider or juice
- 1 tsp vanilla
