Baked Indian Pudding (my version)
Aug. 23rd, 2004 01:17 pmIngredients
4 cups milk (I used soy milk)
1/2 cup cornmeal
1/4 cup molasses
2 Tbsp margarine
pinch salt
The recipe says:
Scald 3 cups of milk, pour over cornmeal. Add remaining ingredients. Mix thoroughly and pour into a greased 1 1/2 quart casserole dish. Place in 250 degree oven.
After pudding has been in oven for 20 minutes, pour in the remaining 1 cup of milk and stir carefully. Continue baking for 5 hours, stirring 4 or 5 times during the first 1 1/2 hours.
What I did:
Throw everything into the crock pot, stir, and put the thing onto low. Cook for anywhere from 4 to 10 hours. (I threw it all on right before bed, and we ate it warm in the morning.)
It's good hot OR cold! Because we put too much salt in (the actual recipe calls for the molasses PLUS 1/2 cup of sugar, and 1 tsp of salt - I didn't put the sugar in, but forgot to reduce the salt), we put a bit of maple syrup on top, which was quite yummy.
