I had such a good night last night, you have no idea. It's just so GREAT to have an entire evening to do what I want.

I got home a little after 6, and Andrew and I had the yummy dinner he'd made, and then he sat on the couch and read while I got to search online for new recipes!!

I mean, it's been a LONG time since I've been able to do that. It felt so GOOD.

At Christmas, Andrew's mom gave me some Piloncillo (Mexican raw sugar), and Palm Sugar (also known as jaggery). So I have wanted to search online for recipes since then, but haven't had a chance.

Last night, I found some yummy chinese sweets using palm sugar, that I look forward to trying.

But the important thing is - I had TIME to LOOK for them! I felt relaxed! And calm! And I got to do something I *wanted* to do! FOR FUN!!!

Anyway, later in the evening I watched part of Girlfight (a movie I have seen previously and loved, and is very motivating, actually), while doing some cardio, and then stretching...

and THEN

I got to look at my big decorating book for almost an hour!! I got to look through, daydream about our perfect house, put little stickies next to the stuff I like, and in general just be.

It was AWESOME.

Life is SO GOOD.

And now.... it's FRIDAY. And then I get to spend two whole days with my bhunny! I'm making a vegan cheesecake tonight, and tomorrow for lunch we're going to our favourite vietnamese restaurant to share it with them.

I'm glad I'm getting me time too. It makes the wait until April 1 much more bearable. If I'd had to work overtime all the way until then, I may have gone crazy.

but i did love roasted the pine nuts alot!! I have been buying and roasting those :)

actually it was just bareable for me , i didn't really hate it. (lol i sounds like SImon)

yeah.. it was bitter..and maybe too mushy for my liking... i liked the ingredients tho.. balsamic, pine nuts, i had chopped up some red onions and added garlic too.

Hmmmmm.... well, ok. That makes sense. It may just be that swiss chard isn't for you? Personally I had to acquire a taste for it - most recipes with it make me go UGH. I just shovel it in, think virtuous thoughts, and then eat the yummy other stuff. heh.

I put toasted pine nuts on as many things as I can... like salad! They are SO GOOD ON SALAD.

The only dish I've ever had with swiss chard in it is a very homey taste for me: Mom makes a kick-ass lentil-swiss chard soup. It's slightly lemony and thick and yummy. I'll send you the recipe, if you'd like it. I know it's vegetarian, and I'm reasonably sure it's vegan.
