So, it's autumn, and I put together some pumpkin apple muffins tonight that are DELICIOUS and healthy. I couldn't help but think a few people on my friend's list might like them...


1 3/4 cups flour
1 Tbsp baking powder
1/4 tsp salt
2 tsp cinnamon
1/2 tsp nutmeg
1 tsp ginger
1/2 tsp allspice
1/4 tsp cloves <---- but next time I'm going to put in 1/2 tsp
1 1/4 cups applesauce
1 1/4 cups pureed pumpkin
1/4 cup oil
2 Tbsp maple syrup
1/2 cup soymilk
1/2 cup raisins

Preheat oven to 400 degrees F
Mix together applesauce, pumpkin, oil, syrup, and soymilk.
Sift together flour, baking powder and spices.
Mix together wet and dry ingredients. Add raisins.

Spoon into muffin tins, bake for 25 min or until toothpick comes out clean.

Did you try them? How were they? I've made them several times, and we really like them, but I posted them on a recipe site, and now someone has said that when they made them, the muffins were really really gooey on the inside and wouldn't cook up properly no matter what.

Ok, well, yesterday was stupidly busy. Today looks like it's going to be the same. Today I *must*:

go to old navy (I need some client safe shirts)
buy groceries
call my mother
cook food for the week
finish the laundry

I hope to have this all finished by 4pm. Wanna come over at 4?

mmmm...thanks! im going to play around with the recipe to use stevia instead of maple syrup and im going to see what i can do to up the protein in them. but i love pumpkin and apples and cloves and stuff in the autumn. i have a good apple crisp recipe that uses oatmeal for the topping...i'll dig it up and post it.

i still havent tried the tofu recipe because we dont have dijon mustard. i modified it though...i went to make the recipe and only then realized we for some reason didnt have dijon...and added peanut butter instead. it was great! that base is a good starter for lots of marinades!

I knew you'd put stevia in. ;) I think you can just put in 2 Tbsp more soy milk instead of the maple syrup. You could possibly skip the Stevia, too - the applesauce makes it pretty sweet.

I'm going to try the tofu with peanut butter!

im so predictable :) but hey, stevia is better than splenda or some other chemical sweetener! i am going to bake today with molasses though. its a really high fibre/protein batter so the molasses wont affect the glycemic index too much.
