tandoori monopoly
Jul. 9th, 2003 10:07 amYesterday we made the MOST delicious dinner. Tandoori chicken with Indian Spiced Vegetable Patties, and yoghurt as a chutney. Whenever I've had Tandoori chicken in restaurants, I've always been disappointed at the blandness, but this recipe I had was fantastic. Spectacular. Brilliant. Extremely Flavourful, and in a good way. It was really low fat and low calorie, too!
That dinner made me really happy. All the low calorie benefits were killed by the Cinnamon Raisin Oatmeal Bars I made that evening, that we scarfed down until my head reeled from the sugar. But who cares? I mean, REALLY. It was a special day. After all, it was Tuesday.
We went to Walmart yesterday and bought Monopoly, and Life. I like board games, and card games, and things like that. I think they're fun. The problem is that not very many of them work with just 2 people! So we bought those two, as extremely capitalistic as they are. :P We played one game of each last night. He whupped my ASS in Monopoly. Like - from the get-go. He won Life by $20 000. It was funny - we both went to College and we both paid off our loans ASAP. Yes, we applied our life lessons to the game. We're such dorks.
I found this new website www.fitday.com, it's fantastic for logging the calories you're eating and the activities you're doing. It's got a lot of nutritional information (that I already know, so that doesn't matter to me), and a little food journal you can keep, and goals to set, and everything. It's really detailed, and I love it. I started using it last week, to start eating only 1500 calories a day (except I've decided to take one day a week off - my brother is adamant that I shouldn't allow my body to get used to 1500 calories - hence the Cinnamon Raisin Oatmeal Bars last week).
I know I talk about this a lot, and I know it's extremely boring to read someone going on and on and on about the same thing AGAIN, but on Monday night I realized there's only a month and a half until we leave!!
A MONTH AND A HALF!
Shit damn, man.
Somehow, 2 months seems that much longer than 1 1/2. So I started to stress more. I'm TRYING to relax. Everything will work out. It HAS to. I said so.
U-hauls are now a more reasonable price, so that's one stressor off my back. When I first started looking at prices, a truck from Albuquerque to Toronto was $2900 USD, and from Albuquerque to Vancouver was $2800 USD. Pretty ridiculous considering it cost us $1500 CND to get down here from Toronto.
Now the prices are more reasonable - $1400 USD to Toronto, and $1300 to Vancouver.
So we can afford that, and not have to switch trucks partway to cut costs. That's good.
I need a job, though. AAAAAAAGGGHHHHHH! When I think of it, which is often, that's what I hear in my head.
I contacted one of my future possibles from the start of my job search. He'd been "intrigued and impressed by my resume and cover letter" (his words), but needed someone immediately. He asked me to get back to him mid-summer, though. So I did, and we'll see what happens with that.
That's enough of my boringness. Later.

Jane and I agreed that your life, as it is now, is pretty much as idyllic as we'd like ours to be. And we both agreed that you and Andrew reading to each other has got to be one of the cutest things we've ever heard (read). Reading about you two is great.

Date: 2003-07-10 08:33 am (UTC)2 tbsp tandoori paste
2 cloves garlic, crushed
2 tbsp lime juice (I used lemon)
1 1/2 tsp garam masala
2 tbsp finely chopped freshed coriander (I hate coriander, I left this out)
6 chicken thigh fillets
1. Combine everything but chicken in a bowl and mix well.
2. Add chicken, coat well, refrigerate for at least one hour (I did 3)
3. Preheat bbq or grill and lightly brush with oil (I didn't use any oil), cook the chicken for 10-15 minutes on medium heat, turning once and basting with the marinade.
Enjoy! And hey, thanks for asking for it! I love sharing recipes, and trying new ones.
